The Distillery

The concentration and transformation rig that turns fruit, grain, honey, herbs, scraps, and 'waste' streams into spirits (where legal), vinegars, extracts, tinctures, and other high-value, indefinite-shelf-life concentrates.

This is the ultimate 'nothing wasted' rig. What the Preserve and Smokehouse cannot use, the Distillery often can. The output is compact, potent, and culturally powerful — medicine, celebration, trade goods, and long-term calories in the form of alcohol or acid.

Fermenters (the safe, legal heart of the rig)

This is where the rig earns its keep — and it's all legal. Fermenting your own wine, mead, cider, and fruit-country 'scrap wines' for personal/family use is allowed under federal law (it's distilling that's restricted — see the legal refs). Run a mix: a glass carboy for clear long-haul wine and mead, a food-grade bucket for primary ferments that throw a lot of krausen, the conical when you want to drop yeast cleanly. Sanitize everything, keep the airlock wet, label the date. Traditionally, folks ran a single crock or a stoneware jug with a cloth over the top and let the wild yeast do the work — that still works for vinegars and country wines. Alternatively, a 1-gallon glass jug with a balloon pricked once for a pinhole is the cheapest sovereign airlock there is.

The hydrometer is how you read a ferment without guessing — specific gravity tells you sugar going in and roughly how far the yeast has eaten through it, so you know when a wine or cider is done and how strong it landed. The acid/pH kit matters most for fruit wines and for vinegar, where acidity is the whole point. Traditionally, people went entirely by taste, smell, and the airlock going quiet — and for a simple cider that's plenty. Alternatively, a cheap digital pH pen covers the same ground as the titration kit for everyday batches. Buy a spare hydrometer; they're glass and they break.

Vinegar is the most forgiving, most legal thing this rig makes, and it turns leftover wine, cider dregs, bruised fruit, and 'too far gone' ferments into a concentrate that keeps essentially forever. The mother is a living culture — keep it warm (70–80°F), dark, and breathing through cloth, and feed it a wine-and-water mix. Traditionally, this is the kitchen crock with a cloth on top that families kept going for years, just topping it up — the original zero-waste loop. Alternatively, you can seed a jar with raw, unpasteurized store vinegar and grow your own mother from scratch for the cost of one bottle. Tinctures and extracts pull the useful compounds out of herbs, roots, citrus peel, vanilla, and garden trimmings into a shelf-stable concentrate — vanilla extract, bitters, herbal tinctures, citrus extract from peels you'd have composted. The folk method is the classic: pack a jar with chopped plant material, cover with a high-proof food-grade spirit you bought legally, cap, shake, and wait 4–6 weeks before straining into amber bottles. Traditionally, herbalists measured nothing — fill the jar, cover with spirit, label the moon it was started, strain at the next one. Alternatively, food-grade vegetable glycerin or raw cider vinegar makes an alcohol-free tincture for anyone avoiding alcohol. Traditionally, this job was a clean cloth and two strong hands twisting over a bowl, and that still works fine for small batches. Alternatively, a sturdy nylon nut-milk or straining bag gets you 90% of the yield for a tenth of the price.

The whole point of this rig is turning bulky, perishable harvest into small concentrates that keep for years — so bottling matters. Siphon off the clear liquid above the sediment, fill from the bottom with the wand to limit oxygen, and label every bottle with what it is and the date. Flip-tops are reusable forever and great for vinegars and ciders; corked wine bottles suit still wines and meads you're aging. Traditionally, this was a cork, a wax dip, and a chalk-marked date on the cellar shelf — and a cool dark corner is still the best storage there is. Alternatively, save and sanitize commercial bottles and cap them with a cheap bench capper.

Read this carefully: this rig documents the EQUIPMENT and the legal paths — it is NOT a guide to running a still, and it gives no cuts, temperatures, or process. Beverage distilling requires a federal TTB permit, and fuel-alcohol and beverage permits are different things; producing distilled spirits without the right permit is a federal matter, not a gray area. A 2026 Fifth Circuit ruling removed the location-based ban in TX/LA/MS, but it did NOT remove the permit requirement and is not nationwide — so the rule of this rig is unchanged: defer to the authority before anything. The real hazards are real: methanol foreshots are a poison, and ethanol vapor is a fire and explosion risk near any flame or spark — those are reasons to follow licensed-distilling safety references and a permit, not to improvise. The legal, useful work — wine, mead, cider, vinegar, extracts, tinctures — is everything above this row. Copper here is noted only because it's the traditional material for the gated path; nothing on this rig encourages unlicensed use. (Start at the TTB links in the refs.)
