The Cheesecave

The controlled aging environment that turns fresh cheese (and compatible charcuterie) into aged, complex, long-keeping food.

Receives milk and meat inputs from future Tend rigs. Provides the conditions (50–60°F / 80–95% relative humidity) for beneficial molds, rinds, and flavor development over weeks to years. This is the slow, patient end of the Transform spectrum — the opposite of quick canning. A household that can age its own cheese and salami has a profound form of food sovereignty.

The parts list. Cores are what you actually need; “if you prefer” opens cheaper, local, or heritage swaps — never budget fallbacks, just other good ways.

Cooling enclosure
Compact dorm/mini-fridge (3.1–4.5 cu ft) run warm via an external controller~$100–180

A plain fridge bottoms out near 38–40°F — too cold for a cave. You don't use its thermostat; you let the temp controller cycle the whole fridge to hold 50–55°F. Pick one with a flat interior and a door gasket that'll seal around a thin probe wire. Traditionally, this is what a root cellar or a real dug cave did for free. Alternatively, a chest freezer holds temp even better and gives you depth for hanging charcuterie — same controller trick.

This is the brain. Pre-wired, two outlets (cooling + heating), a probe you drop inside, and a setpoint you dial to ~52–55°F. It cycles the fridge/freezer on and off to hold the band. Get the dual-stage so a cold garage in winter can trigger a small heat source too. The make-recipe sets the target window — this just holds it.

This rig is the cave, not the make-recipe. The make-day kit — cultures, rennet, the right salt, and for meats the cure (Prague Powder/Cure #2) — belongs to the make step that feeds this cave. CRITICAL: charcuterie cure ratios, the safe-mold-vs-bad-mold rules, and salami pH/water-activity targets are pathogen-critical (Listeria, Staph, botulism in cured meats). Do NOT eyeball them — weigh cure on a gram scale and follow tested charcuterie/cheesemaking references and USDA/FSIS guidance. Raw-milk cheese aging carries its own legal and safety rules (the 60-day rule and state law vary) — check your state before aging raw-milk cheese.
